This weekend marked the beginning of a rather large behind-the-scenes project, which I can’t get into until next month…And no, actually it ISN’T the pink bathroom – I decided to postpone that at the last second in lieu of said secret project. So, to make the rest of my weekend a bit less chaotic, I decided to attempt a recipe for my “Pinspiration Monday” project. I am constantly coming across delicious looking pins that I can’t wait to try, today’s dish being one of them.
John’s a BIG fan of cashews and I have grown to love the flavor myself, so this seemed like a no-brainer. The fact that it was a crock pot meal was the final detail to convince me to break out our plug-in bowl on Saturday morning.
Crock Pot Cashew Chicken
1/4 cup all-purpose flour
1/2 tsp black pepper
1 Tbsp canola oil
1/4 cup soy sauce
2 Tbsp rice wine vinegar
2 Tbsp ketchup
1 Tbsp brown sugar
1 garlic clove, minced
1/2 tsp grated fresh ginger
1/4 tsp red pepper flakes
1/2 cup cashews
Directions:
Combine flour and pepper in a large Ziploc bag. Add the chicken and shake well to coat with flour mixture. Heat oil in a skillet over medium-high heat. Brown chicken about 2 minutes on each side. Place chicken in slow cooker. Combine soy sauce, vinegar, ketchup, brown sugar, garlic, ginger and pepper flakes in a small bowl, and then pour over the chicken. Cook on LOW for 3 to 4 hours. Add cashews and stir. Serve over rice. Makes 4-6 servings.
Now, I tend to enjoy a little extra sauce on my dishes, so I added just a TOUCH extra on all the saucy ingredients (ie. soy sauce, vinegar, ketchup, brown sugar, garlic, ginger and pepper flakes). The meal turned out to be scrumptious – An incredible amount of flavor and, served with the rice and cashews, fed me, John and his best buddy who happened to stop by. We actually ended up with a little bowl of leftovers too. In fact, I’m going to make a mental note right now to grab that as a snack here in an hour or two since I’m off of work for the day…
